Smoky Baked Eggs.

I promised many moons ago to share this recipe and I made it on the weekend so I thought it was time...

Very easy but super tasty and indulgent brunch that will keep you going until dinner!

You will need:
3 big handfuls of spinach leaves
2 eggs [or more if for more people]
1 can of chopped tomatoes
2 slices/rashers of bacon [obviously not essential although I know someone who disagrees!]
1/2 onion
1 cup mushrooms
Pinch of salt
1/2 tsp. dried rosemary [or fresh if you have it]
1 tbsp. of smoked paprika
Black pepper as desired
Generous sprinkling of Parmesan
Shallow baking dish, if you have a cute shape or a nice round one. I found this heart shaped one in an op shop and it's perfect for this dish!

Firstly you do the bacon, onion and mushrooms in a pan with a little olive oil, rosemary, salt and pepper.

Get your baking dish and lay the spinach in the bottom, then top with a third of the can of tomatoes, half the paprika, then layer in the bacon and mushroom then top with more tomatoes and the remaining paprika. Depending on the depth of your dish you may need to use the whole can of toms but you don't have to! Mix it up a bit if you want but try not to disturb the spinach...

Now you need to make your egg holes, with a spoon make a well in the mixture and crack 1 egg into it, then make a another one in an opposite corner or wherever you like [ just not right next to the first one!] If you want more eggs then repeat...

I always add more pepper now!

It should then look like this: [Not super yummy looking but wanted to share the before!]

So then bake this in the oven on around 180 degrees for about 10 - 15 mins, then pull out and sprinkle on your cheese then bake for a further 5 minutes or until as golden as you like!

I served it with some avocado and toast [ good for dipping and mopping]

Let me know if you make it, I hope you like! What's your favourite weekend brunch dish?

Autumnal Easter Long Weekend

Well hello!

What a gorgeous Easter weekend that was! YO.

Always strange for me as Easter is all about Spring but this side of the pond not so much, still very pretty time of year though and I am a big Autumn fan!

If we were in England, Easter would be spent in Sussex by the sea with walks in the countryside, daffodils, a roast dinner and of course family & friends. Maybe if I was lucky an egg hunt although I suppose I'm getting too old... no, never.

We had an eclectic long weekend including the Easter Show, picnics,Wes Anderson's masterpiece, a roast dinner and a day at the markets and new bar at The Grounds, the Potting shed. I ate hardly any chocolate but enough cheese to last a lifetime!

A few snippets:

I do love the Grounds in Alexandria, have you been to the new bar The potting shed? It is pretty awesome, every little detail has been thought of an styled to perfection. Food served in terracotta pot plants and trowels as the beer taps. All very pretty.

Every time we go we can't walk past Salts meats cheese without a pop in, it has the most beautiful selection of produce and strange things that you don't come across, all the glass bottles of colourful fizzy and funny drinks! Yes I am a packaging sucker.

Back to reality with a thud but I have a smile on my face because 4 weeks today I shall be seeing my gorgeous friends and family, I am hoping for a belated egg hunt. He he.

Happy days!

Hot Choconut Love Buns! Easter Treats.

Easter is upon us!

So this weekend I thought I would have a go at making hot cross buns but with a twist, my intention was to make choc chip ones but all the  choc chips melted.... so hence they are choc buns!

I followed this recipe from Taste but I substituted choccie chips for the currants and coconut oil for the butter!I like to make things up a bit in the kitchen... you win some you lose some!

They actually taste pretty delicious, I decided I wanted to make fun shapes instead of just crosses, welcome to the Love buns!

I would be keen to know how you make choc chips ones as I know they are super tasty but these are pretty good too. So if you have people coming over and you want to make fun treats these are a winner, you could have initials or shapes or whatever you want to draw!

I might squeeze another Easter DIY up before the week is out...

Ahoy, I'm a Captain!

Happy Friday peeps!

So as some of you may know I am part of the Sydney Etsy Team, a team of sellers and buyers of handmade and vintage goods as well as supplies. The purpose of the team is to help Etsy sellers from Sydney to connect with and receive support from other local sellers through online networking and meetups.

I have just stepped up as the captain of this team! So I am pretty excited about getting involved and organising some fun and interesting events and will also be looking to reach out to the local community to get people involved!

If you would like to join the team, see here.

Just thought I would share my small piece of news.... I hope to see some of you at an event soon! I am already planning the first one so keep your eyes peeled..

If you want to follow the team Facebook page please do!

Happy weekend!

Boo and Boo Factory - Oh My!

I am in Love.

It's serious.

I think I may want everything in the shop, I had some sort of colour-attack while scrolling through this website and had to share it as soon as possible.

I feel like I am being yelled at by a colourful cheeky monster who wants me to come and play!

Boo and Boo factory, a fabulous handmade leather jewellery label based in Chicago. All made in the studio or as Christina calls it, The Factory! Every piece is a unique work of art, a beautiful explosion of colour, design, form and sculpture.
Interestingly she trained and worked as an architectural designer which is very clear in her work, the forms and shapes that are so defining and precise but then there is  this amazing colourful freedom and style flying out at you. It is simply wonderful work and I am in awe.
She uses a mixture of techniques and materials and you can see an eclectic array of influences shouting out from the pieces.
Ready for some serious colour!

Find and follow her wonderful feed on Instagram at @booandboofactory and shop here for goodness.
Ooh I must calm down, that was all a bit mind blowingly good.
There is no way that can't of brightened up your day!

Wanting Collection! Sock Heaven.

Yet again Instagram has led me to finding something wonderful… and today it is socks! All sorts of brightly coloured and wonderfully fun socks!

Wanting Collection is run by a girl called Emily Zhao. Every Saturday she sells these fabulous socks at Newtown market. She has a very cute Instagram feed: @wantingcollection where she shares all her op shop finds as she fills her house with pre-loved things. She has awesome style and from what I have seen collects some eclectic bits and bobs!

You can buy these wonderful Japanese knitted and an array of socks here or go find her in Newtown on Saturday!
Ooh the colours!

There are men's and women's, stripy, spotty or perhaps even an eggplant!
I am rather fond of the lolly and fruit ones but would happily wear any of them, they are all so bright, fun and cosy! And who doesn't love a cosy sock.

You may be needing some socks, autumn is definitely here! Today I even wore my leather jacket… I know overkill but to be honest I really love wearing it so as soon as I can I will! I must admit I did get a bit hot while walking but for those who know me well know that isn't hard. I am always hot.
Enjoy sock shopping!

Swing and dine anyone?!

Ok, this is pretty awesome. I saw it on the Frankie blog and had to have a further look..

Duffy London have made a fun dining experience!

It is a table that has been handmade by local artisans and craftspeople using ethical materials, and the chairs are SWINGS! Just when you thought meal times were for meals.. oh no, they are for fun and playing too!

A Geo lampshade and the 8 hanging chairs are suspended from the frame around a walnut table top that has been sourced from a sustainable forest so it's all been made with the forest at heart.

This quote is on their website and I thought it was fabulous:

''We don't stop playing because we grow old, we grow old because we stop playing'' George Bernard Shaw.

So enjoy a little interior inspiration..
